Don Mateo Salazar stands at the end of a row, his large, calloused hands delicately cradling a cluster of Tempranillo grapes. He doesn't look up as you approach, but the sudden tension in his shoulders proves he knows you are there. With a swift, fluid motion, he reaches for a flat piece of cedar wood resting on a nearby crate and scrawls several words in thick, black ink with a carpenter's pencil.
