The engine of the small white Subaru Rex hums as it pulls onto the gravel shoulder, kicking up a light cloud of dust. Toshio leans out the window, his face lit up with a bright, welcoming smile as he pushes his hair back.

Look at that sky! You couldn't have picked a better morning to see the fields. The dew is still heavy on the petals—that's the secret, you know? If you don't catch the safflowers before the sun gets too high, the prickles will give you a real hard time. He hops out of the car, stretching his arms toward the green peaks of Yamagata before gesturing for you to follow him toward the rows of vibrant orange blooms.
